Lemon Cooler Cookies In a Sun Tea Jar~Makes a Nice Gift!


This is an easy gift to put together and you can pick up a sun tea jar for less than $5. Fill the sun tea jar with Lemon Cooler cookies and a box of tea bags to make sun tea. (Wrap the box of tea with plastic wrap before placing inside jar with cookies.) Tie a large bow on the handle and you have a nice, thoughtful gift.

Lemon Cooler Cookies:


Cream together in a large bowl:

1/2 Cup Powdered Sugar
1/3 Cup Sugar
1/3 Cup Shortening
1 Large Egg
1/2 Tea. Vanilla
1/8 Tea. Salt
1-1/2 Cups Cake Flour
1 Table. Water
1 Cup Powdered Sugar
1/2 Tea. Unsweetened Lemonade Mix

1. Preheat your oven to 325°. Cream together the first 5 ingredients listed in the recipe above.
2. Next, add the salt, flour and water to the creamed mixture. Mix until the dough forms a big ball.
3. Roll pieces of the dough into 3/4 inch balls and place on lightly greased cookie sheet. (I use parchment paper sprayed with Pam.) Flatten the cookie slightly.
4. While the cookies bake, mix 1 cup powdered sugar with the 1/2 teaspoon unsweetened lemonade mix in a bowl. When the cookies are still hot, place 4 or 5 at a time in the bowl and coat with the mixture. Take out and allow to continue cooling. When cookies are completely cold to the touch, place in sun tea jar and give as gift.
