EASY and INEXPENSIVE Homemade Marshmallows Video Tutorial!

Here's the recipe for those of you who don't want to write the directions down while viewing this tutorial:
Line a square baking pan with parchment paper and spray with cooking release spray.
In a large mixing bowl, add 2 packs of gelatin with 6 tablespoons of water. Set aside.
In a saucepan, mix
1-1/3 cups sugar
1/2 cup plus 2 tablespoons of light corn syrup
1/4 cup water
Cook over high heat while stirring, until candy thermometer reaches 240 degrees. At that point, take ths saucepan off the stove and pour the mixture into the gelatin/water mixture.
Add 1/2 teaspoon salt
1 teaspoon peppermint extract
1-1/2 teaspoons of vanilla
Beat with an electric mixer for 5-10 minutes or until very thick.
Pour the thick marshmallow mixture into your prepared pan. Spray the top of the marshmallow mixture with cooking release spray. Place another piece of parchment paper on top and gently press evenly on top. Allow to sit overnight.
With a pair of scissors, cut into strips and then squares. Coat with equal parts of powdered sugar and cornstarch. Shake off excess and bag for Christmas gifts!
