Easy Maple-Cashew Fudge~Excellent Recipe!

I made this fudge last Christmas and handed it out in little boxes, tied with a ribbon. This would be an excellent little Christmas gift for your male co-workers. It was a hit, so I thought I'd post it here. You can pick up a can of the salted cashew halves and pieces at Walmart for $3.00 a can. During the holiday season, it may be priced a little lower.

1 Cup Butter
2 Cups Brown Sugar, Packed
1/2 Cup Evaporated Milk
4 Cups Powdered Sugar
1 Teaspoon Imitation Maple Flavoring
2 Cups Cashew Halves and Pieces in a Can (Salted Or Lightly Salted)

1. Line a 9 inch square pan with foil and leave a little foil hanging over the edge. Spray with Pam.
2. Melt butter in a large saucepan over medium heat; Add brown sugar and then reduce the heat to medium-low. Cook for 2 minutes, stirring constantly.
3. Add the 1/2 cup of evaporated milk and continue stirring until the mixture comes to a full boil. Remove the pan from the heat and transfer into a large mixing bowl. Allow to sit and cool for approx. 20 minutes.
4. Using an electric mixer, gradually mix in powdered sugar and maple flavoring until well blended and smooth. Stir in cashews by hand and spread mixture into the prepared pan. Chill a minimum of two hours before cutting into 2 inch squares.
