Enjoy this delicious recipe for blueberry lemon bread! You can make it with or without the glaze, but I think I enjoy it best with the glaze.
1 Cup Butter
2 Cups Sugar
3 Large Eggs
2/3 Cup Buttermilk
3 Cups Flour
1/2 Tea. Baking Soda
1/2 Tea. Salt
2 Packed Tablespoons of Lemon Zest
2 Table. Lemon Juice (Fresh)
8 Oz. Frozen Blueberries
Glaze:
8 Oz. Powdered Sugar
1/4 Cup Melted Butter
1-1/2 Packed Tablespoons of Lemon Zest
1/4 Cup Lemon Juice (Fresh)
1. Preheat your oven to 325° and then grease & flour two loaf pans.
2. Cream together the butter, sugar and eggs. Stir in the buttermilk.
3. In another bowl, mix together the dry ingredients. Stir in the lemon zest and lemon juice. Fold in frozen blueberries.
4. Pour batter into the loaf pans and bake approx. 60 to 65 minutes. (Middle rack of oven.)
5. When bread comes out of the oven, cool approx. 15 minutes in the pan, then remove from the pan to finish cooling on a cooling rack.
6. Beat glaze ingredients together and drizzle icing over warm loaves. The icing will become harder when the bread cools to room temperature. (Place wax paper under cooling rack first.)
