2 Cups All Purpose Flour
2 Teaspoons Baking Powder
2 Teaspons Bakind Soda
1 Teaspoon Salt
2 Tablespoons Pumpkin Pie Spice
5 Packed Tablespoons Brown Sugar
1 Cup Canned Pumpkin
2-1/4 Teaspoons Vanilla
1/2 Cup Canola or Vegetable Oil
2 Cups Milk or Buttermilk
4 Large Eggs
1. In a large bowl, combine the flour, baking powder, baking soda, salt and pumpkin pie spice.
2. In another bowl, Combine the pumpkin, brown sugar, eggs, milk, vanilla and oil. The pancake batter will be on the thick side.
3. Spray a hot griddle with cooking release spray. (I like the Pam spray for high-heat grills.)
Pour approx. 1/3 cup portions on the griddle. When lots of bubbles form on one side, turn and cook on the other side until done. Serve with warm maple syrup. Makes approx. 32 pancakes.

Those sound good, I think I would reduce the recipe a little though. It makes a lot.I just froze some pumpkin puree for use during the holidays.
