Butter Toffee Bar Cookies


Butter Toffee Bar Cookies

1 Cup Butter (Land 'O' Lakes®)
1 Cup Packed Brown Sugar
1 Large Egg Yolk
2 Cups All-Purpose Flour
1/2 Cup Semi-Sweet Chocolate Chips
1/2 Cup English Toffee Bits (Or a couple of Crushed Toffee bars, such as Heath or Skor.)If you buy the bag of Heath Toffee Bits, there will be enough for 3 pans.


1. Preheat oven to 325°
2. Combine butter, brown sugar and large egg yolk with mixer on medium speed.
3. Reduce speed to low and add the flour. Mix until well combined.
4. Press evenly onto bottom of ungreased 13X9 jelly roll pan.
5. Bake 22 to 25 minutes or until bars are lightly browned (Bars will be soft).
6. Immediately after taking bars out of oven, sprinkle with chocolate chips and let sit for 3
minutes. Spread chips with back of spoon, making swirls. Sprinkle with toffee bits.
7. Allow to cool about 1 hour and cut into bars with a sharp knife while bars are slightly warm.

*TIP: When I made a second batch of these bars, I lined the 13X9 jelly roll pan with parchment paper before adding the cookie dough. I found this MUCH easier to lift the bars out of the pan and cut them into large squares.
